To take good soup stock, you mix natural kelps used for soup stock and shavings of dried bonito together, and boil them. When you take a little bit time, you can use the full flavor for various purposes.

The ingredients are kelps used for soup stock, shavings of dried bonito, and soft mineral water.

✥Ingredients✥ for 1.2 ℓ

Kelps used for soup stock: 20g
Shavings of dried bonito: 70g
Water (Soft water, mineral water): 2 ℓ

✥Procedure✥(10 minutes)
------------------------------------- 
[1]Wipe the kelps with a wet cloth to clean. Don't wash them.

[2]Put water and kelps in a pot and soak them for 30 minutes. 
When you don't have enough time, you can boil them in a minute. 

[3]After that, boil them. When starting to effervesce,
turn heat lower and put the shavings of dried bonito slowly and boil them for about 5 minutes.

[4]Turn heat off and leave the pot for 15 minutes to bring out the flavor. 

[5]Put a kind of net at the top of the bowl and strain the soup with cloth or paper towel.
That makes beautiful golden soup stock.

[6]Let the soup stock cool and then keep it in a container for keeping in refrigerator.

✍Please extract it quietly without stirring not to make turbid. 
The clear soup stock makes any dishes fresh flavor.
