If you stock the noodle soup, you can use it for substitute of tempura sauce or some season of cooking. Let's make such a convenient noodle soup.
The ingredients are water, kombu, sugar, mirin, shavings bonito, and soy sauce.
✥Ingredients✥ for 10 servings

Water: 1 cup (6.76 fl oz)
Kombu: 4 cm
Sugar: 4 tablespoons
Mirin: 1/2 cups (3.38 fl oz)
Shavings bonito: 30 g (2 tablespoons)
Soy sauce: 1 cup (6.76 fl oz)
✥Procedure✥(10 minutes)

[1]Wipe kombu with wet towel or something. Soak them in water.
[2]Put the all ingredients except shavings bonito in the pot, and boil them.
[3]When the scum rises to the surface, skim off it.
[4]Take kombu and turn the heat off.
[5]Add shavings bonito and let them cool.
[6]Strain the soup with colander not to be muddy.
✍Keep the soup in a container and use all of them for about 2 weeks.
You had better stock it in the refrigerator.
When you eat cold Soba or Udon, adjust the noodles soup thicker.
When you eat warm Soba or Udon, adjust it thin.
The important flavor is spices as well as the noodles soup.
